Agave nectar is a natural sweetener mainly produced in Mexico. There are several different species of the succulent agave plant such as Agave tequilana (also known as Blue Agave, or Tequila Agave), Salmiana, Green, Grey, Thorny and Rainbow.
It is the same plant as where tequila comes from.
During harvest the leaves are cut away and the juice is extracted from the core of the plant, which is called the pina because it resembles a large pineapple. It is then filtered and heated at low temperatures no higher than 118 degrees F in order to preserve all the enzymes, vitamins and minerals.
